Snowy Days, Cozy Kitchens, and Mimi’s Famous Cutlets

The last week of January brought ice and snow to Western North Carolina, which meant my husband, our very energetic dog, and I spent far too much time indoors and not nearly enough time out and about. Winter has a way of slowing everything down — except a dog who thinks snow is the greatest invention of all time.


Even with the weather keeping us tucked inside, I managed to get a couple of things ready for publication, including one that’s especially close to my heart.




A Family Recipe With a Story

When I first started dating my now‑husband, Anthony, he asked if I could make chicken cutlets. Looking back, it was absolutely a test — a delicious one — to see if I could match his appetite for the food he grew up loving.


After 18 years together and 10 years of marriage, I think it’s safe to say I passed.


These cutlets come straight from his mom, Mimi, who could turn a simple kitchen moment into a memory. I’ve made a few small “healthy-ish” upgrades over the years — swapping vegetable shortening for avocado oil and adding a little grated parm to the breadcrumb mixture because, well… cheese makes everything better.

Life Lately


I haven’t been as diligent on the blog as I’d like, but I’m working on it. A bit of oral surgery slowed me down for a few days, and then life did what life does — it got busy.


But in exciting news, I recently attended a class at our local Wilkes County Community College on social media interaction and marketing. It was inspiring, energizing, and just the nudge I needed. I’m sketching out a plan to create more, share more, and maybe even get brave enough to put my face on video. Baby steps.
