Cozy Burgers

To cheese or not to cheese — that was definitely not my question.

I found this funny little recipe tucked inside the Big Blue Book, and honestly, I don’t remember eating these as a child. But as soon as I read it, I was reminded of Krystal burgers if you grew up in the South, or White Castle if you were from the North.

The original recipe boldly declared NO CHEESE, which I completely ignored because life is far too short to skip the cheese.

These cozy burgers are perfect for a rainy day when grilling isn’t an option — or when you’re trying to impress your husband. You can see mine happily enjoying more than a few of these. Oh, and check out my funny IG video below to see and hear the sizzle!

Cozy Burgers (Nostalgic Diner-Style Sliders)
Prep Time: 10 mins | Cook Time: 10 mins | Servings: 12 mini sliders / 6 servings

đź›’ INGREDIENTS

  • 1 lb. very lean ground beef

  • 2 tbsp butter

  • â…“ cup onion, finely minced

  • 1 pkg Pepperidge Farm Slider buns (or 6 hot dog buns, halved)

  • 12 dill pickle slices

  • To taste: Salt

  • For serving: Yellow mustard & ketchup

  • Rule of thumb: No cheese allowed! 🚫🧀

đź‘©‍🍳 DIRECTIONS

  1. Shape the Patties: Divide the lean ground beef into 12 small portions. Flatten them out into nickel-thin patties using a spatula.

  2. Sauté the Onions: Heat a griddle to medium heat. Melt the butter and sauté the finely minced onions for 1–2 minutes until soft and fragrant.

  3. Sizzle & Steam: Add the thin beef patties to the griddle alongside the buttered onions. Season the burgers with salt to taste. Place the bun tops and bottoms cut-side down on the griddle near the patties so they absorb all that rich, buttery onion aroma.

  4. Flip & Cover: Flip the patties after about 1 minute of cooking. Immediately top each cooking patty with a bun top to trap the steam and heat.

  5. Assemble: Transfer the toasted bun bottoms to your serving platter. Using a spatula, lift each burger patty complete with its melted-on bun top and buttered onions directly onto a bun bottom.

  6. Top & Serve: Add one crisp dill pickle slice, a squirt of mustard, and ketchup to each burger. Serve immediately while warm and cozy!
