Crispy Chocolate Chip  Cookies

Chocolate chip cookies have always been my husband Anthony’s love language. If I ask him what kind of cookie he wants, he doesn’t hesitate — it’s chocolate chip every single time. I adore them too (truthfully, there aren’t many cookies I’ll turn down), but lately I’ve been wanting to give my go‑to recipe a little twist… something a bit nuttier, a touch more interesting, and maybe even a smidge healthier.

So I started playing with almond flour — partly for flavor, partly because I’m forever trying to sneak a little extra protein and fiber into our days. Toasting the almond flour first is the secret: ten minutes in a low oven and suddenly it smells warm, nutty, and irresistible. The batch that came out of this little experiment was so delicious I knew it had to be shared.

And if almond flour isn’t your thing, no worries at all — just swap it for an extra half cup of all‑purpose flour and bake away. Either version makes a cookie worth lingering over. Enjoy every bite.

Crispy‑Edge Chocolate Chip Cookies

These cookies are everything I love in a kitchen moment — buttery, rippled edges, a soft center that doesn’t apologize for being a little dramatic, and chocolate chunks that melt into tiny pools of joy. They’re the kind of cookie you make when you want the house to smell like you meant to bake… even if you didn’t.

The toasted almond flour gives them this whisper of nuttiness that makes people say, “What is that?” and you just smile because some secrets are meant to be kept. And yes, we pan‑bang — because around here, we like a cookie with personality.

Ingredients

  • 1 cup (2 sticks) unsalted butter, melted and slightly cooled

  • 1 cup granulated sugar

  • ½ cup packed light brown sugar

  • 1 large egg + 1 egg yolk (room temp)

  • 1 tbsp pure vanilla extract

  • 1 ½ cups all‑purpose flour

  • ½ cup toasted almond flour

  • ¾ tsp baking soda

  • ¾ tsp fine sea salt

  • 1 ½ cups semi‑sweet chocolate chunks or chips

  • Flaky sea salt for finishing (optional)

Instructions

1. Whisk the Wet Stuff In a big cozy bowl, whisk the melted butter with both sugars until smooth and glossy. Add the egg, yolk, and vanilla, and whisk like you mean it — about a minute — until the mixture lightens and looks a little fluffy.

2. Fold in the Dry Stuff Add the flours, baking soda, and salt right into the bowl. Fold gently until the dough comes together. Stir in the chocolate chunks.

3. Scoop & Space Line two baking sheets with parchment. Scoop generous 2‑tablespoon mounds and give them plenty of breathing room — at least 3 inches. While you want the spread the melted butter may give you more than you want, if after the first batch yours spread more than you like, you can put your baking sheet in the fridge for 10 ish minutes prior to baking.

4. Bake at 350°F for 12–16 minutes. The time is dependent on your oven and your crispiness preference. 

5. Finish & Cool Pull them when the edges are deep golden. Hit them with flaky sea salt. Let them rest on the warm pan for 10 minutes before moving to a rack to finish crisping.
