Greek-ish Turkey Meatballs

🍋 Why We Love These Spicy Lemon Turkey Meatballs

My husband Anthony and I are always on the hunt for healthy dinners that still feel comforting and full of flavor. Turkey has become one of our go‑to proteins — whether it’s ground for meatballs or a grilled half breast, we’re both big fans. Turkey is definitely not just for Thanksgiving around here.

I’ve made Greek‑style turkey meatballs before, but Anthony likes things with a little kick. Lucky for me, I had some gorgeous Fresno chilies on hand — spicy enough to wake things up, but not so hot that they overpower the dish. They also add the prettiest pop of red.

And because I’m me… you know lemon had to make an appearance. The zest in these meatballs brightens everything and makes the whole dish sing. Add in the fact that this is a true one‑pot meal with easy cleanup, and you’ve got a weeknight winner that feels fresh, cozy, and a little bit special.

Ingredients:

1 lb. Ground turkey (85/15)

3/4 cup plain breadcrumbs

1 egg

1 tsp kosher salt

1 tsp ground black pepper

1 tbsp fresh oregano, chopped

3 tbsp fresh parsley, chopped

3 cloves garlic, minced

Zest and juice of 1 lemon

2 tbsp grated white onion

1 tbsp olive oil (for browning)

1/2 white onion, finely chopped

1–2 Fresno chilies, finely chopped (optional)

2 tbsp minced garlic

1 cup orzo pasta

3 cups chicken broth

10 oz fresh spinach

1/2 cup crumbled feta cheese

Handful fresh herbs to garnish

Instructions

1. In a large bowl, combine breadcrumbs, egg, salt, pepper, oregano, parsley, garlic, lemon zest, and grated onion. Mix well to create a flavorful base.

2. Add the ground turkey and gently fold it into the mixture. Avoid over‑mixing — that’s the secret to tender meatballs.

3. Form the mixture into walnut‑sized meatballs and set aside.

4. Warm 1 tablespoon of olive oil in a skillet over medium heat. Brown the meatballs slowly on all sides, then remove and reserve in a bowl.

5. Using the remaining oil in the skillet, sauté the chopped onion, garlic, and Fresno chilies with a generous pinch of salt until softened and fragrant.

6. Add the orzo and toast it for 1–2 minutes, letting it soak up the aromatics.

7. Pour in the chicken broth and nestle the meatballs back into the skillet. Cover and steam for 5 minutes — this keeps the meatballs extra tender. Now is the time to squeeze that lemon into the broth mixture.

8. Remove the lid and continue simmering until the orzo is cooked through.

9. Stir in the fresh spinach and let it wilt into the warm orzo and meatballs.

10. Serve hot, topped with crumbled feta and your favorite fresh herbs
