Healthy Kale and Eggs
I was chatting with my nephew recently about easy ways to boost protein and sneak more leafy greens into everyday meals. This recipe grew out of that conversation—pulled from a few inspirations and my own mission to get more kale into my routine. It’s endlessly adaptable, too. Add a handful of toasted pumpkin seeds for crunch, swap in spinach if that’s what you have, or mix in whatever veggies are calling your name. The beauty of this dish is that it never has to taste the same twice, which is perfect for anyone who likes a little variety in their week.
